So when the updated wallets come out for staking, can I keep my old Daedalus wallet and install the new wallet and make sure my balance and passwords / seed works before deleting the older version of Daedlus?

Most updates install on top of the previous version and the wallet files don’t change so there’s no need to be concerned. If that’s not the case, more information will be given at the time of the update.
